Stuffed Bell Peppers

This awesome dish serves 8, however, don’t be afraid to make the whole dish as they heat up great!

Ingredients
1 lb Lean Ground Turkey
1/2 C dried quinoa
16 oz chunky salsa
1 C Red Onion
3 C Vegetable Broth
1 tsp minced garlic
1 tsp chili powder
1/8 C fresh cilantro
8 Green Bell Peppers

Directions: In a large saucepan cook ground turkey until browned. Drain grease and put to side. In saucepan cooke onion and garlic in hot oil over medium heat about 5 minutes or until onion is tender. Stir in broth. Bring to boiling, then add uncooked and rinsed quinoa. Simmer, covered, about 25 minutes or until quinoa is tender. Remove from heat and stir in all the rest of the ingredients (including turkey) except for the peppers.

Preheat oven to 400 degrees. Slice tops off of the bell peppers and remove and discard seeds. In a 3-quart rectangular baking dish, arrange peppers in a single layer. Spoon stuffing mixture into sweet peppers; place pepper tops back on top. Pour about a 1/2 cup of water into the bottom of the dish, and bake, covered lightly with foil about 30 minutes or until peppers are crisp-tender and stuffing mixture is well heated.
